Vegetarian Chilli Beans


Ingredients of Vegetarian Chilli Beans

1 - One tablespoon Olive Oil
2 - One brown Onion ( finely chopped )
3 - One red capsicum deseeded ( coarsely chopped )
4 - 1 x 435g can refried beans
5 - 420g can or boiled Beans
6 - 1 x 420g can red kidney beans ( rinsed and drained )
7 - 1 x 400g can diced Italian tomatoes
8 - 90g (1/3 cup) light sour cream
9 - One bunch coriander ( leaves picked )
10 - Mixed salad leaves to serve
11 - Flour tortillas to serve ( optional )

How to Prepare :

Heat the oil in a large non-stick frying pan over medium heat. Add onion and capsicum and cook, uncovered, stirring, for three minutes or until the onion softens.Add the combined beans and tomato to the pan and stir until well combined. Increase heat to high and bring to the boil. Reduce heat to medium and simmer for five minutes.Divide the bean mixture among serving bowls. Top with sour cream and coriander. Serve Vegetarian Chilli Beans with mixed salad leaves and tortillas if desired.
