Curried Egg and Potato Salad


Ingredients Curried Egg and Potato Salad

1 - Four medium Potatoes  ( diced )
2 - Six hard-cooked eggs ( peeled )
3 - Two medium apples ( chopped )
4 - 2/3 cup  ( chopped celery )
5 - 1/3 cup chopped green Onion
6 - 1/3 cup fat free yogurt or sour cream
7 - 1/4 cup light mayonnaise
8 - 1 tablespoon Vinegar
9 - 2 teaspoon mild curry powder ( or to taste )
10 - 1/8 teaspoon Pepper
11 - 1/4 teaspoon Salt

How to Prepare :

Cook potatoes in boiling salted water until tender almost 5 to 7 minutes
Meanwhile, chop four eggs. Slice remaining two eggs into wedges for garnish; set aside.
Drain potatoes well when cooked. Combine chopped Eggs Potatoes Apples celery and green Onions in large bowl.Whisk Yogurt, Mayonnaise, Vinegar, Curry powder, Salt and pepper in small bowl. Pour dressing over potato mixture. Gently stir to coat well. Curried Egg and Potato Salad is ready Enjoy...
