Eggs And Potato Curry


Ingredients of Eggs And Potato Curry

1 - Five Eggs ( Hard boiled )
2 - One Potato (  small-medium cooked & cut into cubes )
3 - One  Onion ( big & finely sliced )
4 - 4 -5 Green Chilli  ( slit lengthwise )
5 - 1½ teaspoon Ginger & garlic paste ( each )
6 - 1½ – 2 teaspoon Coriander powder
7 - ¼ teaspoon Turmeric powder
8 - ½ teaspoon Fennel powder ( perumjeerakam podichathu )
9 - Garam Masala ( just a pinch )
10 - Two cups Thick coconut Milk
11 - Cashew paste ( Optional )
12 - Coconut Oil
13 - Salt ( taste )
14 - Curry leaves

How to Prepare :

To make Egg And Potato Curry first Heat Oil in a pan and add finely sliced Onion & salt. When Onion becomes golden brown add green Chilli & Ginger Garlic paste. Fry for almost 2-3 minutes. Add the masala powders & a ½ tsp of Oil & fry for 3 minutes. Add cooked potatoes & mix well. Add thick coconut milk & bring to boil. Reduce flame to lowest & add hard boiled eggs & cook till the gravy becomes thick, say around 5 minutes. Garnish with coriander leaves. Serve Egg And Potato Curry hot with palappam, kallappam, puttu & chapathi.
