Tomato Rice
Ingredients for Tomato Rice :
1 - Two cups Basmati rice
2 - One teaspoon Shah jeera
3 - One Bay leaf
4 - Six Cloves
5 - One Cinnamon stick
6 - Two Cardamoms
7 - Two Onions( medium sized finely sliced )
8 - 1 1/2 teaspoons Green Chili-Ginger-Garlic paste
9 - 12 to 15 Mint leaves ( Pudina )
10 - 1/2 teaspoons Kasoori methi (dried fenugreek leaves)
11 - One teaspoon Red chili powder
12 - A pinch Cumin Powder (roasted jeera powder)
13 - Two Tomato (large red tomatoes finely chopped)
14 - One Tomato (large red tomato blanch peel skin and puree)
15 - 1 1/2 tablespoons Coriander leaves (finely chopped for garnish)
16 - One tablespoon Oil
17 - One tablespoon Ghee (optional)
18 - Salt to taste
How to Prepare :
Heat oil and ghee in a vessel or pressure cooker add shah jeera cloves cinnamon and cardamoms and stir fry 30 seconds. Add the sliced onions and saute for three minutes. Add green chili-Ginger and Garlic paste mint leaves and kasoori methi and saute for 4 to 5 minutes.Add red chili powder and cumin powder and mix. Add chopped tomato tomato puree and salt to taste and mix. Cook for 8 to 9 minutes on low to medium flame, or till oil separates.Reduce heat and add the raw rice mix saute for a mt. Add 3 3/4 cups of water and bring to a boil. Reduce flame and cook till rice is done. If using pressure cooker, cook rice up to 3 whistles.
Remove onto a serving bowl. Garnish with fresh coriander leaves. Serve Tomato Rice warm with raita or any curry of your choice.
