Garlic Prawns


Ingredients of Garlic Prawns

1 - 300 gms uncooked  Prawns ( medium sized )
2 - 1 1/2 tsp minced garlic
3 - One cup chicken stock
4 - Three tbsp butter
5 - Two tablespoons flour   
6 - 1/2 teaspoons dry grounded mustard
7 - 1/4 cup cream optional
8 - One tablespoon chopped parsely for garnishing
9 - salt and pepper preferably white as required

How to Prepare :

Heat butter and add garlic in a saucepan .Add flour until combined . Remove from heat .Gradually add stock till combined.Return pan to the heat and stir till the sauce begins boiling .Add mustard , and season with pepper and salt as required. Bring the sauce to a boil and add the prawns .Take off from the heat as soon as the prawns color changes.That will take hardly two minutes .The sauce should not be too thick .garnish with parsely and serve Garlic Prawns immediately .

Ingredients of Steamed Fish in Bangali Style

1 - Two lb Fish   
2 - One level dessertspoon Turmeric powder   
3 - Three Dry red chilies   
4 - Six Green chilies   
5 - One heaped tsp Mustard seeds   
6 - Two tablespoons Mustard oil   
7 - Salt to taste

How to Prepare :

Wash and slice the fish or cut into large pieces.Add salt and set aside. Grind the turmeric, red chilies and mustard seeds with a tbsp of water to make a paste.Slit the green chilies.Mix together the fish, ground paste, oil and green chilies in a double boiler and steam for ten minutes.Uncover, turn the pieces of fish and steam again for ten more minutes.Serve Steamed Fish in Bangali Style hot with boiled rice.

Ingredients of Grilled Fish Steaks

1 - One clove garlic ( minced )
2 - Six tablespoons olive oil
3 - One teaspoon dried basil
4 - One teaspoon salt
5 - One teaspoon ground black pepper
6 - One tablespoon fresh lemon juice
7 - One tablespoon chopped fresh parsley
8 - Two fillets halibut (6 ounce)

How to Prepare :

First of all In a stainless steel or glass bowl combine Garlic, Olive Oil, Basil, Salt, Pepper, Lemon juice, and parsley.Place the halibut filets in a shallow glass dish or a resealable plastic bag, and pour the marinade over the fish. Cover or seal and place in the refrigerator for 1 hour, turning occasionally.Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from the heat.Remove halibut filets from marinade and drain off the excess. Grill filets 5 minutes per side or until fish is done when easily flaked Grilled Fish Steaks with a fork.

Fish Curry ( Machli Salan )

Fish Curry ( Machli Salan )


Ingredients Fish Curry ( Machli Salan ) :

1 - 1/2 kg Fish                                         
2 - 1 cup Oil                                           
3 - 1/2 tablespoons Red chili powder                       
4 - 1/4 teaspoons Turmeric powder ( haldi )              
5 - One Lemon
6 - 1/2 teaspoons Ginger and Garlic paste
7 - 1/2 teaspoons Salt or according to your taste                                  

For curry:
1 - One teaspoon Red chili powder                       
2 - 1/4 teaspoons Turmeric powder ( haldi )              
3 - Two tablespoons Coriander powder (dhania powder)                     
4 - One tablespoon Lemon juice                              
5 - One teaspoon Ginger and garlic paste              
6 - Salt according to your taste                                        
7 - Coriander leaves ( hara dhania ) for garnishing

How to Prepare :

First marinate the fish slices with vinegar 2 tablespoons and salt 1 tablespoons for 10 minutes. Then wash it with cold water.Then marinate the fish with red chilli powder, turmeric powder(Haldi), salt ginger garlic paste and lemon juice. And keep it side for 10 to 15 minutes.Heat oil in a wok and fry those marinated fish slices till golden brown.Now in a bowl take lemon juice, red chilli powder, turmeric powder (Haldi), coriander powder (dhania powder), ginger garlic paste, salt and water about two tablespoons and mix it.Now heat oil in a frying pan, and add this mixture in it and saute it for five minutes, then add water in it (about 1/4 cup) then again cook it for some time (do not over cook the gravy, it will change its color). When the gravy is cooked add the fish slices in it and garnish with coriander leaves serve Fish Curry ( Machli Salan ) hot .

Handi Fish Korma

Ingredients for Handi Fish Korma

1 - ½ kg Fish
2 - ½ teaspoons Black cumin
3 - One teaspoon White cumin
4 - 2 tbsp heaped Coconut ( desiccated )
5 - ½ cup Yogurt
6 - 1 tsp Coriander powder ( heaped )
7 - 1 ½ teaspoons Ginger garlic paste
8 - 1 ½ teaspoons Chili powder
9 - ¼ teaspoons Turmeric
10 - ½ cup Oil
11 - Two tablespoons heaped Onion ( brown and grinded )
12 - Two tablespoons Coriander leave ( chopped )
13 - Two Green chilies ( chopped )

How to Prepare :

Slightly roast black cumin, white cumin and desiccated coconut, grind together and keep aside.In a bowl add yogurt, mix with coriander powder, ginger garlic paste, chili powder and turmeric.Heat oil add yogurt with masala, fry for 2 minutes stirring continuously.Add onion with roasted masala.Add fish with 1 cup water, cover and cook on low flame till fish tender and oil comes on top.Lastly add coriander and green chilies and serve Handi Fish Korma hot.

Fish Nuggets

Fish Nuggets


Ingredients for Fish Nuggets

1 - 1/2 lb fish fillet (cod or any other firm fish)
2 - 1 tablespoon lemon juice
3 - 3 tablespoons milk
4 - 1 egg
5 - 2 tablespoons Dijon mustard
6 - 2 tablespoons yogurt
7 - Salt
8 - Pepper
9 - Breadcrumbs

How to Prepare :

First Preheat oven 395°F, 200°C. Line out a baking tray with baking parchment.Cut fish fillet bite-sized pieces (nuggets). Drizzle with lemon juice. Sprinkle with salt and pepper to taste.In a bowl combine milk, egg, mustard and yogurt. Mix well and add salt and pepper to taste.Dip the fish nuggets into milk mixture to cover nuggets with the sauce.Take nuggets out of the sauce (using a fork) and let drip off excess of sauce and coat with breadcrumbs.Place them on the baking tray and bake them for 10 minutes. Then heat up the oven and broil them until they are golden brown.Take them out of the oven and serve them hot with your favorite sauce, salsa or dip.Can easily prepared in advance and freeze. Follow the directions and bake them only for 10 minutes. Take them out of the oven and freeze them. To serve: take them out of the freezer, thaw and broil them until they are golden brown.
NOTE: I do not have given the amount of breadcrumbs needed. Sometimes I need more, sometimes less. But coat the nuggets only with a thin layer of breadcrumbs. You can replace the breadcrumbs by ground almonds. This will add a nutty flavor to the nuggets.

Ingredients for Garlic Whirl

1 - ½ kg Flour
2 - One tablespoon Garlic powder
3 - Four tablespoons Clarified butter
4 - Oil to fry as required
5 - Salt to taste

How to Prepare :

Take ½ kg flour, 4 tbsp clarified butter, 1 tbsp garlic powder and some salt in the bowl and knit a dough. Roll in to make a thin layer and roll them. Take some oil in the pan and fry them. Dry it and serve tasty Garlic Whirl.
